Sencha Green Tea Ice Cream Recipe (Easy)
Ingredients
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar (substitute sugar with stevia 1/8th or honey)
- 1/4 cup sencha green tea leaves
- 6 egg yolks
* Stevia is a natural herb alternative to sugar. You can buy it online as a dried powder product, or grow the herb at home in the garden which is easy to do. Stevia is super concentrated, so you need much less. The recommended ratio is: 1 teaspoon sugar = 1/8th teaspoon of stevia
Method

In a medium saucepan, combine the cream, milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.

Remove from heat and add the sencha green tea leaves. Cover and let steep for 10-15 minutes.

Strain the mixture through a fine-mesh sieve into a large bowl, pressing on the tea leaves to extract all the liquid.

In a separate bowl, whisk the egg yolks until light and frothy. Gradually pour the hot cream mixture into the egg yolks, whisking constantly.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened enough to coat the back of a spoon.

Strain the mixture again into a clean bowl and chill until cold.

Freeze in an ice cream maker according to the manufacturer's instructions.
