Spearmint Tea Infused Quinoa Salad
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 tablespoon of spearmint tea
- 1 red bell pepper, diced
- 1 small cucumber, diced
- 3 -6 small cherry tomatoes diced
- 2 green onions, chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Method
- Rinse quinoa thoroughly and drain.
- In a medium saucepan, bring water to a boil. Add the Spearmint tea bag and quinoa. Reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and quinoa is tender.
- Let quinoa cool.
- In a large mixing bowl, combine cooked quinoa, red bell pepper, cucumber, green onions, parsley, and mint.
- In a small mixing bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the quinoa salad and toss to combine.
- Sprinkle cherry tomatoes on top.
- Serve chilled.
