Spearmint Tea Infused Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon of spearmint tea
  • 1 red bell pepper, diced
  • 1 small cucumber, diced
  • 3 -6 small cherry tomatoes diced
  • 2 green onions, chopped
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Method

  1. Rinse quinoa thoroughly and drain.
  2. In a medium saucepan, bring water to a boil. Add the Spearmint tea bag and quinoa. Reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed and quinoa is tender.
  3. Let quinoa cool.
  4. In a large mixing bowl, combine cooked quinoa, red bell pepper, cucumber, green onions, parsley, and mint.
  5. In a small mixing bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over the quinoa salad and toss to combine.
  7. Sprinkle cherry tomatoes on top.
  8. Serve chilled.
