Each part of the plant is used for different purposes. The flowers (calyxes) are what hibiscus tea is made of. It's been a staple (and highly prized) ingredient by many vegetarian Indians and Asians who consume the leaves for the iron content. What you can see here are the red calyxes. These are below the flower. The plant 'flowers a bloom' then it falls off to leave behind this beautiful red capsule "calyxes". We pick the hibiscus calyxes by hand, carefully separating the 'waxy petals' from the inner part.
The inside of the calyxes is where the seed forms.
What's really amazing about this particular plant is the seed part is separated and added to water, to boil on it's own to form a type of gelatine which is used to make jam with the hibiscus (both cooked together or separately).
We are making hibiscus jam here (you can see both the petals and inner part separated to be cooked slowly). This method is used to make jam or syrup. The only additional ingredient is water + a sweetener like stevia or sugar to make it less tart (optional).
