How to Make Blue Rice
If you've ever wanted to impress your guests or get your kids to eat more rice, here's a way you can do it with no effort at all! Cook rice as normal. Use our Empress Blue Butterfly Pea Flower + lemon or lime to make it.
All you need are three ingredients:
- Rice
- Empress Blue Butterfly Pea Flower (tea)
- Water
Multi-colour rice
- Scoop out 1/2 cup of cooked rice (to every 4 cups of cooked rice)
- Take 2 Empress Blue Butterfly Flowers - make tea with 30 mls hot water.
- Stir, remove flowers.
- Pour water over the 1/2 cup, mix well.
- Take 1/2 cup rice and mix through white rice.
Option 1: Add bright yellow
- With a tiny bit of saffron, follow the same instructions.
- Add saffron to boiling water, 30ml and mix through 1/2 cup rice.
- Mix both coloured rice and white rice together.
Option 2: Add bright magenta pink
- Same process as option 1, using Hibiscus tea.
How to turn your rice blue
- Fill pot with uncooked rice and water.
- Add 3-4 empress blue butterfly pea flowers to pot to cook with rice (4 flowers per 2 cups of rice).
- Use rice absorption method.
- Once rice is cooked remove the flowers.

How to turn your rice purple
Follow same steps as blue rice, but once water is boiling with rice add 1-2 drops of lime or lemon juice, this will change the ph level in the flower and turn the water purple. More citrus will increase colour intensity.
How to turn your pasta blue or purple:
- Follow same steps above (cook in tea), or
- Make tea and substitute water in pasta dough for tea (which will give you a stronger colour)
- Add a few drops of citrus to change the colour to your desired purple
